地中海料理とは、ギリシャ、イタリア、ポルトガル、スペインなどのヨーロッパや北アメリカ諸国の地中海沿岸の料理です。これらの国々は、それぞれ異なった民族、文化、独自のアイデンティティを持ちながら、紀元前の時代から陸路と海路を伝わって文化交流をし、その独自性を保ちながら、共通の食文化を育ててきました。

温暖な気候、その太陽の恵みから生まれる野菜や果物、ナッツの数々、芳しい香りのハーブの種類の多さ、、、そして、なんといってもそれらを取り持つのはオリーブ!同じ食材を使っても、調理法もスパイス使いもその地方ならではで、興味のつきることはありません!

シンプルでありながら、そのバラエティーに富んだ料理の数々は、作る回を重ねれば重ねるほど、その楽しさ、その美味しさ、その奥深さに、誰もがはまってしまうことでしょう。 

健康志向の今、地中海料理はピッタリの料理といえますが、、、

美味しくなければ、楽しくなければ、そして何より、愛がなければ素敵な食卓は生まれません。それぞれの国の食文化に敬意を払いながら、私と一緒に地中海料理を勉強しませんか?

The  Mediterranean Sea separates  the different countries that surround it, but at the same time it has been for thousands of years the road for which they have communicated and traveled to trade, to invade and it is the sea that gives a similar climate to all the countries that surround it, mild winters, hot summers and in general there are scarce  rains. This similar mediterranean climatology also gives them  similar agriculture and we can say that the frontiers of the mediterranean cuisine are defined by the cultivation of the olive tree and where there are olive trees we par excellence have the two mediterranean products:the olive and the olive oil. 

The Sea Mediterranean has been cradle of big civilizations like the Fenicians, the Egyptians, the Greeks, the Romans one and the Ottomans, among others, and it has produced such a movement  of invasions, mixtures of races, ideas and ways to cook until arriving to todays  mediterranean one, varied, flavorfull and colorful cuisine that its known today. Therefore it is not extrange that are repeated many of their plates and uses of their products continually in different countries. 

The use of the aromatic herbs as laurel, the parsley, oregano, rosemary, mint and  thyme, the spices like the saffron and the paprika, the meats like the lamb, the fish  from the same sea and the cultivation of eggplants, marrows, tomatoes, garlics, lemons and the dry fruits as the almonds and the hazelnuts so used in the recipes. And, of course the cultivation of the wheat that gives place to infinity of breads, with yeast or without yeast, depending on the religions. 

All this enormous quantity of products and their millennial wisdom to prepare them and to combine them, always with the olive oil as the main actor, they give place to the mediterranean diet, one of the most sane and healthy of the world. Let us discover this world together and let us enjoy it .
